Baby Carrots -Mmm, mmm?

I recently got an email about baby carrots being dipped in an anti-microbial,  chlorine solution, to minimize contamination, "sanitize" our food. True?

Yes, this one is. The claim is they rinse the chlorine off so that makes it "safe." Are ALL baby carrots chlorine immersed? I don’t know. Are other veggies? Yes.

It’s best to just cut your own carrot sticks, as well as other chopped veggies, and avoid both "contaminated" cut-and-packaged vegetables and the chlorine, a known carcinogen.

Avoid chlorine in your drinking water too – and your showering water. Get an RO filtering system for your drinking water, and a shower filter.

Today is a REAL Menu, not a great Menu Plan. 🙂 On a hectic, non-planned day, this is what you may find to eat around here.

Breakfast:

  • Barley Grass Juice
  • Bananas

Lunch:

  • Carrot-Raisin Salad
  • Pumpkin Muffins w/ Butter

Snack:

  • Fresh Fruit

Supper:

  • Baked Potatoes
  • w/ Creamed Peas
  • Lettuce, Tomato, Carrot Salad

Fake-acino – Friday Food

fridayfood2.jpgI promised this one, my fake, Good for You-Naturally!™ cappacino.

Lisa’s Fake-acino

Make a cup of roasted barley/chicory herbal coffee (Cafix) with hot, not-milk (instead of water). Add 1/2 tsp. raw Carob Powder, and 2-3 drops flavored (English Toffee, is a favorite) Stevia Drops (Sweet Leaf brand). Froth in frother.

When you are traveling, you can use Better than Milk (a milk substitute powder – soy or rice) and skip the frothing, to make an easier “on the road” drink. Just make your herbal coffee with water, and add milk powder, carob powder, and stevia drops and stir well. (Plain Teeccino or Celestial Seasonings Roastaroma are other herbal coffees you can use. Teeccino brews like coffee; Roastaroma brews like tea – in a tea bag.)

Tips: Of course, you could use one of the already flavored Teeccinos.

Carob Powder can be substituted in any recipe that calls for cocoa powder. It is a bit different taste than chocolate, but a good, Good for You-Naturally!™ substitute. Also, it is not bitter like chocolate.

Stevia leaf is an herb that is 300 times sweeter than sugar. You can buy it ground and sifted (a green powder – the straight herb) or a white powder (I don’t know what they do to it, obviously this is a processed product) or as a “tincture” in grapeseed oil (what the Sweet Leaf drops are.) When using the powder you use just a very small pinch, the drops, just a couple drops.

[Update: We have mainly used the plain ol’ cut and sifted Stevia herb, and just recently began using the Sweet Leaf drops. I’ve never tried or looked into what other Stevia processors were doing to it. Erica at SuperMom has posted why she only uses Sweet Leaf brand and not others.]

Today’s Menu – On the Road

Today’s Menu

Not much “planning” went into Today’s real Menu. I thought I had posted ahead to cover today while we were gone, but it’s not here, so I’ll give you my “on the road” menu for today – doing the best I can when choices are limited.

Breakfast:

  • Barley grass Juice – Barley Life/ Barley Max (raw juice powder, brought from home and mixed with a bottle of RO water – Aquafina. This is a good choice when you can’t make fresh juice, and actually good anyhow, because most people don’t fresh juice a lot of greens. We drink this several times a week at home too, usually for our second glass of fresh juice for the day, the first usually being one we juice fresh.)
  • Dried Apple Rings (home dehydrated with no additives, brought from home – the fresh organic pears we brought from home are gone – mmm-mmm, so good!)
  • Sprouted Wheat Bread – Food for Life brand
  • w/ butter and raw honey spread on it

Lunch:

  • Romaine Lettuce Salad with Walnuts and Vinegrette Dressing
  • Bottle of Reverse Osmosis Purified Water – Aquafina

Snack:

Really Raw Almonds (brought from home) & more RO bottled water

Supper:  We will get home just before suppertime, and then we have a couple classes/practices, so it will be fast and easy prep, probably:

  • Whole Wheat Spaghetti with Prego Organic Spaghetti Sauce with Mushrooms
  • Frozen Organic Sweet Corn – steamed
  • Romaine, Carrot, and Tomato Salad with Olive Oil and Red Vinegar Dressing (If we have time we’ll make it an Italian Vinegrette)

The Cycle

Attitudes play a major factor in your health. One thing attitudes (affecting the whole realm of our soul) do is affect our choices in eating. When we make bad choices we feel bad (physically – and many times emotionally also.)  This creates an ongoing Cycle, that takes us increasingly down.

Bad eating and bad health is a downward spiral. We eat bad – then feel bad – then eat more bad – then feel worse … and on and on. Most “bad” foods bring an addiction to them. Refined sugar is especially addictive, as well as caffeine, and many more, even meats can be. People have to take a step to break out of the cycle. They have to force themselves to eat what is Good for You-Naturally!™ because it isn’t what they want to eat. (And they may feel worse for a bit while their body is “detoxing” and going through “withdrawal”.) They naturally are going to follow their addictions, as well as turn to their “comfort” foods. But doing what comes “naturally” is not always “Natural” or Good for You.

Although a few people can try to claim ignorance to what they should be doing (“I just eat what I like/what my family has always ate/what is convenient and have never given any thought as to whether it’s good for me or not”), I don’t think there is a person, (in America at least) who really thinks coffee or Coke or donuts, etc. are “good” for them. For some people it’s just a physical “addiction” (“I know what I’m eating isn’t good, but I catch myself eating it anyhow,” or “I try to stop, but ‘can’t'”).

For some it is a depression thing – a defeatist attitude. The “I feel bad (not just physically, but also emotionally) for eating wrong, I can never change, so I’ll just keep on doing it.” They just give up trying to do right.

For some people it can be a controlling emotional thing, even a reaction to guilt thing, in “I don’t deserve good health/to feel good because I’ve done wrong, so I’ll just eat wrong to punish myself (or for some, in their mind to “punish” others. Instead of repenting, since this is usually a “prideful” person who won’t humble themselves to repent.) It’s kind of a self-destructive thing that they’ll eat what their flesh really wants, but knowing it will harm them (perhaps thinking, in someway, it will “hurt” someone else instead – a vengeful thing). It’s a control thing – anorexia and bulimia can fit in here, as well as gluttony. “No one can control me in eating. I’ll eat what I want.” Or, “I’ll show you.”

Many various factors can come into The Cycle, to various degrees – these are some of the most extreme, there are, no doubt, MANY more. It’s a combination of physical and emotional things that interconnect. We have to learn (renew our minds – and our bodies) to eat to live, not live to eat.

In renewing our minds, we need to look at why we are eating what we are eating – and should we be? As always, the first step is recognizing the problem.

GFY-N! Corn Bread – Friday Food

fridayfood2.jpgOn these great chilly fall days nothing beats a pot of homemade Chili Non-Carne and a pan of Good for You-Naturally! Corn Bread with honey butter, to warm the tummy. But be sure to include plenty of raw veggies with it to get your optimal nutrition. I shared this menu in my Today’s Menu this week, and since I’ve already posted my Chili recipe, I figured I’d complete the meal by posting my Corn Bread recipe today.

Lisa’s Good for You-Naturally! Corn Bread

Mix together:

  • 1 c. whole corn meal/flour (freshly ground organic)
  • 1 c. whole wheat flour (freshly ground organic)
  • dash unrefined salt (Real®, himalayan, celtic)
  • 2 tsp. non-aluminum containing baking powder (Rumford’s)

In a separate bowl, mix together:

  • 1 farm fresh egg (from free ranging organically fed chickens)
  • 2 Tbl. raw organic coconut oil (melted) (or extra virgin organic live oil)
  • 1 Tbl. raw honey
  • 1 c. not-milk

Combine the contents of both bowls, mixing lightly.

Pour into greased 8″ cake pan or muffin pan – or preferably a greased cast iron skillet.

Bake at 400° for 20 minutes for pan bread, 10-12 minutes for muffins.

Makes 10-12 (so obviously, we double or triple.) 🙂

Honey Butter

  • 1 stick softened, real unsalted butter (preferably organic)
  • 1/4 c. raw honey

Mix well.

Thanksgiving is quickly approaching. I’ve been asked lately about meat eating and the Good for You-Naturally! lifestyle of eating. These two (Thanksfgiving and meat eating) are not necessarily directly connected. But in answering the question, I came across a post I wrote to my egroup in 2002 for Thanksgiving – on meat eating. More on Almonds

Last year I posted notice that the government had once again overstepped their bounds and in cohorts with the CA Almond Board made a ruling that almonds must be pasteurized. This does not need to be noted on the label AND the label can still state "raw" almonds.

This of course did not make people happy – growers/ small handlers nor those that know the importance of raw food sources for health, conscientious consumers.

At the time I learned of this ridiculous, controlling law I passed on to you some sources for obtaining truly raw almonds, unpastuerized, direct from the grower. Now I’m hearing that even the grower cannot not ship directly to the consumer, who has knowingly and intelligently chosen to buy unpastuerized almonds, but that they only way they can sell them is directly on location.

I’m checking into this, to see if we can still purchase unpastuerized almonds. http://organicpastures.com & http://www.realrawfood.com/wholesale-raw-nuts.htm#almonds still have them on their site – which appears to be good news. dansranch.com still offers them if you can pick them up at the ranch.

Raw Cashew Milk – Friday Food

fridayfood2.jpgThis week we tried a new not-milk. I’d heard that Cashew Milk is good, and realized that in all our experiments we hadn’t tried it yet. So we did. And it was.

Here’s the SIMPLE recipe we used.

Raw Cashew Milk

Soak 3/4 c. raw cashews in plenty of water to cover for 4-6 hours (or overnight). Put into filter cup of SoyaJoy Milk Maker, and attach cup to motor head.

Add pure water to the fill line in the SoyaJoy (aprox. 6 cups) and place motor on it and plug in.

Do NOT hit Start. Push the MOTOR button FOUR times, (listen for the beep 4 times) THEN push Start. (We do not want the machine to go through the Heat cycle, as we want raw not-milk.)

The machine will go through a few grind and rest cycles for just a few minutes, and then your Raw Cashew Milk will be done! Strain, if you like, and Chill. See other ideas for “additions” to your not-milks here.

Here’s what we found. Cashews, make a nice creamy not-milk. It has a slight nutty taste, more so than almond, but still mild. Being a soft nut, cashews break down more so than other nuts and grains, so there was very little “sediment” in our strainer. But more in our not-milk container after sitting a while.

I didn’t add anything to this batch, as we were mainly pouring it over Sweet Rice – and I  made a cup of not-coffee cappacino with it. (Recipe another day. If I don’t get this posted NOW, it won’t be Friday.)  🙂
