What Water?

The Hallelujah Acres newsletter just came out with a great response to a recent Mercola article. On this one, I do and have all along, sided with the position that HA takes.

Recently, one of the most popular website health advocates in America wrote in his newsletter that “distilled water is more dangerous than tap water.”

After reading the article — and knowing that the information shared was far from accurate — I asked Michael Donaldson, PhD., Research Director here at Hallelujah Acres to respond. …

While there is a sliver of truth there, the whole article puts distilled water in a false light. Such health advocacy is irresponsible.  Here is the rest of the story…

Bottom line, distillers with a post carbon filter (as most are made) produces the best water we can drink. If you feel the need to remineralize your water (with minerals more bioavailable than the rock minerals originally in the water) do as we’ve suggested for years, adding a few grains of brown rice to the container of water or a squeeze of fresh lemon juice.

Green Smoothie Know-how

When making Green Smoothies, I rarely use a Recipe. I grab whatever we have on hand that sounds good. I aim to include a combination of more greens than fruits. Some recommend 40% fruit 60% greens, and for beginners to start with a reversal of this percentage, 60% fruit 40% greens, then work up to the other way around. If even “40% greens” is too much for you to begin with, start with less and gradually work your way up. In real life, this is not a “science”, we’re talking close to equal amounts, a little more, a little less.  I say, just put in 2-3 fruits and a couple large handfuls of greens, to fill your blender up, starting with just 1 large handful if you need to.

The other “rule” is to have a variety. It is important to “rotate” your greens (and fruits), and not have the same one every day. However, I acknowledge that 1) when beginning to eat more Greens, people usually prefer the more mild tasting ones. 2) when shopping in local grocery stores, it may be next to impossible to find much variety that is organic (and remember lettuce is one of the “Dirty Dozen”.) Baby Spinach is very mild and easy to find organic, so it is most often included by “newbies”. However, we encourage you to branch out. Romaine is also usually available organic. (It’s not one of my faves in Smoothies though, but maybe it will be yours.) Baby Spring mix is the other kind of lettuces that is easier to find organic. Kale is also commonly used in Green Smoothies, but may not be easy to find organic.

In addition to your fruits and greens, you can also include other add-ins. Fresh almond milk, almond butter, other nuts, flax, chia or other seeds, raw coconut oil, raw nut or goat milk yogurt, carob powder, or “superfoods”.

5 Helpful Health Tips

5 really important health tips from Paul Nison (a month or so ago) that you’d also find on my list:

1) Get rid of your microwave and replace it with a juicer.

2) Use your juicer everyday – at least 1 glass green juice daily.

3) Sleep with your window open (at least cracked open) to get good fresh air circulating.

4) Use a dry brush daily (on your skin – to get dead skin off.)

5) Don’t eat when it’s dark out. (Eat during daylight hours.)

He shared a few more in his video. Some pretty controversial, but good sense.

This Week’s Blessings

My crazy week and HUGE BLESSING at the end. What kind of crazy person decides to peel old, cheap wallpaper (i.e. not the kind that comes right off, but the kind we’ve been working at getting off for 10 years) off the kitchen walls and patch, paint and wallpaper and border them 2 days before 19 people come to Thanksgiving dinner. Yep, that’d be me.

My Father God, and many others (my bestie Julie!) BLESS me all the time. But just to give added Thanks this ThanksGiving week, I share this week’s blessings.

This past week I decided I just really didn’t want to go through another holiday with the kitchen as it was. My cupboards had been repainted sometime in the last year but those walls were continuing to drive me nuts, ripped wallpaper on some walls, wallpaper removed on some, leaving plain white, or painted stripes, or leaf stencils, – in my least favorite color – all randomly scattered.

With 8 of us currently living at home, and 4 grown daughters and their families (8 grandchildren) that come and visit, I and the older children spend a lot of time in the kitchen. It really should be somewhere inviting and cheery to be in. It hasn’t been for the 10 years we’ve been here. It’s been a depressing disaster. It was time to do something. And when I decide it’s time. That means NOW!

So on Tuesday and Wednesday, when we should have been doing on the pre-prep for Thanksgiving dinner – food, cleaning, and setting up – the boys helped me strip the rest of the paper, and I headed out to look for new wallpaper – because I don’t like to paint. I found one pattern in stock that would go with my kitchen – almost the color of the paint we’d bought to put on those walls. Wasn’t quite sure what I was going to do if it didn’t match the border I’d bought 10 years ago (to go with the paint) but thankfully it matched! My bestie, who likes to paint, but not paper, said she’d come help me.

All was going well, until we came to the places that needed primed, as to not show through the paper. Out come the paint brushes and rollers. Then there were the holes to be patched. I did great at the small ones. Then we got to the big one. Chipped it out and put about a 16″ square of drywall patch in it. Wednesday evening found us finishing. But with that primer still out, I’m thinking. The rest of the walls (top half) could really use a fresh coat of paint. And away I went. And that antique cupboard, while I’m at it. 1 a.m. I finally finished. And I love it!

The children had gotten things pretty well cleaned around here, but nothing was set up and no food started. Thankfully, I had remembered to ask one of them to get the turkey out of the freezer Tuesday night. But God redeemed my time, – must’ve been the cheery atmosphere I had to work in – and all the food got fixed, and everything got set up and finished before guest began arriving.

In the meantime, the younger children had been working on preparing a play to present the story of the Mayflower and the ThanksGiving feast of the Pilgrims and Indians. The play was a hit, and dinner with 19 of us, (12 were unable to make it,) was a wonderful family feast. We were blessed indeed to all be together. Thankful of so many blessings – including 2 little ones, yet to come next year.

I think it strange, after spending a day giving Thanks for the bountiful provision of the Lord, we go shop till we drop buying more, more, more! Yes, I understand getting gifts and winter needs when prices are super cheap, but it still seems strange. I don’t think whoever dreamed up Black Friday was a great Thanks Giving person.

Anyhow, after preparing and cleaning up from all of Thur. I slept in on Fri. while grown dd’s hit the early morning Door Busters. They are great about picking up whatever I want from the super sales for me. Then I go out later in the morning for the “common” things that are worth buying at the great prices, but not things that fly off the shelves – like kid’s boots and coats, and jeans – and a new stove!

Yep, after 2-3 years of looking, the stove that has all the features I want was on Door Buster Sale (and since our Sears is not a full one – very small, tools and appliances only – and has never stocked this one, nobody else had taken the 2 allotted per store and they were able to order it in for me at Door Buster price! They said it’ll take a while to get it in, like 2 weeks. I said, “I’ve waited 2 years, I can wait 2 more weeks.” It will be nice to not have to deal with fickle burners, uneven heating oven, and broken pan drawer. And to have GAS burners, YEA!!, FIVE of them – with oval griddle burner.

Just blessed beyond measure. New kitchen walls, family time, and now a new stove coming.

No More Organics?

The takeover of crop seeds by the big 5 are making it harder and harder for those that want to raise organic foods to do so. More on GMO’s —

At this point, a mere FIVE companies – biotechnology companies at that — own the vast majority of all worldwide seeds. The enormous ramifications of this should be fairly obvious.

Genetically modified (GM) seeds, particularly corn and soy, have already taken over in many areas of the world, effectively eliminating the use of conventional and “heirloom” seeds, and along with them, the ancient, sustainable farming practices that produces healthful food.

For example, in the US, as of 2009 genetically modified (GM) soybeans accounted for 91 percent of the soybean market. Eighty-five percent of all corn grown was GM, as well as 88 percent of all cotton.

Many pro-GM crop fanatics argue that genetically engineered (GM) crops are superior in a number of ways, but evidence to the contrary is all around us…

Diabetes Day?

Today is World Diabetes Day.  According to their website, World Diabetes Day raises global awareness of diabetes. “The campaign calls on all those responsible for diabetes care to take control of diabetes.” Diabetes Education and Prevention is the World Diabetes Day theme for the period 2009-2013.”

As the organization rightly notes, diabetes is on a extremely rapid rise.  “The last thirty years have seen a rapid increase in type 2 diabetes. In 1985, an estimated 30 million people worldwide had diabetes. A little over a decade later, the figure had risen to over 150 million. Today, according to IDF figures, it exceeds 285 million. Unless action is taken to implement effective prevention and control programmes, IDF predicts that the total number of people with diabetes will reach 435 million by 2030.”

Education and Prevention are extremely necessary. But rather than directly addressing cause and effect, the site focuses on “risk factors”, noting overweight, lack of exercise, and “unhealthy diet”, among others. It’s funny though how “Education and Prevention” can mean totally different things to different people. For the International Diabetes Organization and the over 12 drug companies that sponsor World Diabetes Day it means educating people about how they can “manage” their diabetes with insulin. For the team that made the film “Simply Raw: Reversing Diabetes in 30 Days” it means educating people on how they can prevent and even reverse diabetes with a raw and living foods diet. Why Carrot Juice?

Rev. George Malkmus, founder of Hallelujah Acres, shared his story this week on how his colon cancer was completely cured 35 years ago, with no medical modalities, only a change to God’s original diet for man, including fresh raw juices – from those foods God gave. What’s So Special About Carrot Juice?

Thirty-five years ago, when I was told I had colon cancer, Evangelist Lester Roloff encouraged me to eliminate all animal foods (both flesh and dairy) from my diet, along with refined sugar and refined grains.

He went on to encourage me to consume lots of carrot juice if I wanted to restore my health. Not understanding all the reasons why, I took his advice.

Within days of making these dietary changes my rectal bleeding had stopped. Within less than a year the tumor in my colon had disappeared – all without any help from a doctor or the use of any chemotherapy, radiation, or surgery.

After this experience I rationalized that if carrot juice could help my body recover from colon cancer, it might be good to continue consuming it order to help me remain well. And I have done just that.

Friday Food – Granola

Nuts. Flakes. And Fruits. Granola is known as the “health food”. But beyond that granola can be a great Good for You-Naturally!™ food for our health. It is super simple to make, and has endless variations – according to your tastes or what you have on hand.

Granola begins with grains – traditionally flakes, that is rolled oats, but more healthy is soaked/sprouted and dried oat groats or buckwheat. Soaking releases enzymes inhibitors that are in the grain to keep it dormant, (from sprouting,) to preserve it. Soaking will once again awaken it to life, and our health, providing better digestibility. If you prefer, you can leave the grains out and use nuts and seeds only.

Nuts and seeds are the next key ingredient. We stick to raw ones, for their health and life giving factors. Ideally, these should be soaked and dried too, to release the enzyme inhibitors. If you have tree nut allergies, leave those out and just include seeds that you are able to tolerate.

Sweetener and fat are the next ingredients. These can also help hold the granola together, and are both somewhat optional. Dates are a great natural sweetener that also help bind the other ingredients together for a crunchier/chunkier granola. Raw honey and pure maple syrup are other good options, if you use them. Raw coconut oil is our good fat of choice. Of course, the nuts and seeds also provide good fats. Flax seed is a great seed to include that also provides good fat and acts as a binder. While adding these liquid ingredients, you may add a bit of water too.

Seasonings are our next ingredients. Any of your baking spices may be appropriate, such as cinnamon, nutmeg, allspice, even ginger if you really like it. I also like to add real vanilla and/or maple flavors.

Finally we get to that third category, fruits. I’m listing them last, because all the other ingredients are mixed together and dried or baked before adding dried fruits. Dried coconut shreds are a staple in our granola. Raisins, dried apples, apricots, or most kinds of dried cherries or berries – strawberries, cranberries, blueberries, raspberries, etc. –  can be added. You could also add fresh apple bits, or even a bit of applesauce as a binder, before dehydrating/baking.

OK, I’ve said it twice, dehydrating or baking. We recommend dehydrating, at low temperatures, for retention of nutrients. If we’re going to make a good healthy food, we want to keep as many of the nutrients as we can intact. Cooking destroys far more nutrients than dehydrating at low temps does.

That’s it. Mix it together and dehydrate it at about 105°-110°, until dry. Store in an air right container. Preferably glass.

What about proportions. Use what you like. there is no right way. But below are some proportions we like – and in parenthesis one of our fave mixtures. All amounts are approximate. This one is more traditional and uses the more common rolled grains, which are steamed, not completely raw, but still a good whole grain.

Lisa’s Good for You-Naturally!™ Granola

7 cups flakes (rolled oats 5 c., rolled barley 1 c., rolled rye 1 c.)

1-1.5  cup raw nuts and seeds – any combination you like (1 c. almonds, 1/4 c. sunflower seeds, 1/4 c. sesame seeds)

1/2 – 3/4 cup sweetener/water  (1/3 c. maple syrup, 1/3 c. water)

1/4 c. fat/oil (raw coconut oil)

1/4+ c. ground flax seed (These are full of really good fats that we are all so lacking, always add them.)

1-2 tsp. spice (1.5 tsp. cinnamon)

1-2 tsp. flavoring (1 tsp. vanilla, 1 tsp. pure maple flavoring)

Mix all together and dehydrate. When dry mix in:

1+ c. chopped dried fruits (1/2 c. coconut, 1/2+ c. raisins, dried apples or strawberries.)

Store in air tight container.

Serve with milk, or in/on yogurt, or just by the handful!
