fridayfood2.jpgNo, I’m not repeating the recipe from a couple weeks ago. I’ve been asked about another recipe I have for Refried Beans – the Fast and Easy Way!

Instant Refried Beans

Mill clean, organic dried, pinto beans in your NutriMill (or other grain mill that is designed to do dried beans,) at the same setting you use for bread flour, or slightly courser. (No, you don’t have to use organic, but it’s better for you if you do. Yes, you DO have to use dried. DO NOT wet them in any way before grinding. Just pick out any foreign objects.)

Boil – 2.5 c. purified water in a small saucepan.

Whisk in:

3/4 c. pinto bean flour

1/2 t. sun-dried sea salt

1/4 t. cumin powder*

rounded 1/2 t. chili powder

small clove minced garlic, organic – or scant 1/8 t. garlic powder

Stir over medium heat about 1 minute, until mixture thickens. (Lumps are fine.)

Reduce heat to low and cover pan. Cook approx. 4 minutes more. (Mixture will thicken more as it cools.)

Add:

approx. 1/2 c. organic, natural Salsa

Serve with fresh, corn Tortilla Chips or use as a burrito filling, in whole wheat tortillas.

Bon Appetite – whoops, forgot again – Ole!

*Note: Use non-irradiated spices. You can add a bit more salt, if you really must, and less or no garlic, if you want.

2 weeks ago 3 of our grandchildren had birthdays. (Yes, all within 4 days.) There are many more “famous” birthdays this month. 1 of our grandchildren shares their day with Ronald Reagan. I’m not sure how we missed that one. Another with Norman Rockwell.

Feb. 12th was Abraham Lincoln’s 200th birthday. Our newspaper included an article written about our family’s namesake town, Hodgenville, KY, (even though there are no Hodgens there anymore.) Our relatives reminded us of the stories of Abe going to our ancestor’s house to eat cookies and play with the children. We read the article, but didn’t do any special studies of Lincoln, since we just did a whole semester on the War Between the States less than a year ago. Sorry Abe.

Lincoln gets to share his birthday with Darwin. We aren’t into celebrating that one. But we did watch Expelled the night before last. Good thing to do to recognize his life – and the effects it has had on our society. Or read 7 Men Who Rule the World from the Grave.

Next week, 22nd, is George Washington’s birthday. You can read some ideas I posted for “celebrating” this one, that’s highly worthy of noting. OK, it’s not like a birthday party or anything. But it is good resources for learning more about him, (as the above 2 are for Darwin and his ideas.) But we do get to celebrate the day with cake, candles, presents and all, as George shares his day with my father-in-law.

The other highly noted birthday we will be “celebrating” (focusing on) this year is John Calvin’s 500th. It’s worthy enough to get a whole year’s celebration. (Or rather, will take a whole year to read his greatest work.) (The “day” isn’t until July 10th.) You can read more about what I’m already doing for it.

A couple other noteworthy birthdays you have missed already this month are Thomas Edison, on the 11th, William Henry Harrison, on the 9th (Does anyone know who he is?) and Charles Dickens and Laura Ingalls Wilder on the 7th. Henry Wadsworth Longfellow is yet to come, on the 27th. But none of them have any of our family to share with, so we won’t be celebrating them.

We have a pretty good record for shared birthdays in February, with 3 of our 4 family birthdays sharing with someone we would note. March brings 2 family birthdays which have no one noteworthy to “share” with. I don’t think our children will mind having the day all to themselves.

Today is the day the CPSIA goes into effect. Due to prayers and actions taken by many, there has been a stay granted on much of this law. I noted some of it on Jan. 31st.  (And there is plenty more in previous posts, if you are clueless as to what I’m talking about.) Part of the new enforcement policy, that was released on the 6th is:

5. Product Classes Whose Lead Content Is Consistently Below Lead Limits

The Commission staff has begun to identify classes of children’s products
whose lead content appears to fall consistently below the prescribed limits.
The staff is not aware of a single documented case in which a product falling
within one of the following classes contained total lead above 300 ppm:

• Ordinary children’s books1 printed after 1985
• Dyed or undyed textiles (not including leather, vinyl or PVC) and
non-metallic thread and trim used in children’s apparel and other
children’s fabric products such as baby blankets.  This class does not
include such products if: (1) they have undergone further treatment
that may impart lead (2) they are ornamented with metal, rhinestones
or other objects; or (3) they have plastic or metal fasteners with
possible lead content (such as snaps, grommets, zippers, or buttons)

Upon completion of the staff’s investigation of these product classes, the
Commission intends to issue guidance addressing them in greater detail.  In
the meantime, the Commission’s Office of Compliance shall not prosecute
any person for manufacturing, importing, distributing, selling or offering for
sale a children’s product (or part thereof) that falls within the two classes
described above on the basis that it contains more than 600 ppm lead unless
the Director of Compliance finds that (1) such person had actual knowledge
that the product contained more than 600 ppm lead; or (2) continued to
manufacture, import, distribute or sell such product after being put on notice
by the Commission staff.

IOW, children’s books printed after 1985, as well as general textiles, have consistently proven to not have lead in them. This means that many children’s general and home education resources, as well as fabric items, can continue to be produced and sold without testing.

This is great news for many home ed publishers. But it has also already affected many. Some have put forth much money to have this testing done, in order to comply before today’s deadline date. (Obviously they needed to act before this unforeseen, though welcome, change came about at the end of last week.) Others have closed out either their entire business or certain aspects of it.  Continue to pray for those this has already hit financially, and pray that God would restore what the locust has eaten.

Many, even committed Christians who have submitted their childbearing to the Lord, question, “Should we really continue having children in these economically troubled times?”

I found the following quote quite interesting in that light. “Throughout the course of history, there is no instance of economic growth accompanied by population decline.

This quote comes from Don Feder, in his summarizing the important issues brought forth in the DVD Demographic Winter: The Decline of the Human Family which explores the rapid worldwide decline in birthrates and how it will impact many areas of our lives.

If you tend to see children as a burden, especially during economically tough times I encourage you to check God’s view of this, in your Bible. The following resources may be helpful too.

And if you see children as a blessing from God whenever they come, you will be encouraged by these.
