Last week my niece had the honor of playing with her high school band AND the Navy band at Pearl Harbor. This is especially touching for our family, as my uncle was in the Navy band and stationed at Pearl Harbor when it was bombed Dec. 7, 1941. Thankfully he was not wounded, although his ship was damaged.

Comments Off on Friday Food – Lisa’s (Chicken ‘n) Rice Casserole
Chicken ‘n Rice Casserole
(or just plain “Rice Casserole” for a yummy easy meatless meal)
Measure 3.5 cups long grain brown rice* into the bottom of a deep 9x 13 pan (I use Pampered Chef 9×13 Stoneware).
Over the top of that sprinkle a couple handfuls each of chopped celery* and diced onion* – or 1 handful each of dried,
and a small handful of dried parsley*, and about a teaspoon of dried basil* (crushed).
Mix together in the pan. (I just stir around a bit with my fingers. 🙂
If desired, add a bit of cooked, shredded chicken* over the rice and seasonings. (We buy organically grown whole chickens, which I boil and shred. I use less than 1/2 chicken. Most of the time I make this meatless.)
If making meatless, you can add a shredded carrot* or two and/or 1-2 cups frozen peas*, if desired.
Measure 7 cups hot broth (from cooking chicken). If you don’t have broth, just use hot water.
Add, and stir to dissolve, 1-2 teaspoons/cubes of vegetable (or chicken) bouillon/broth powder** (I use Rapunzel vegetable bouillon cubes or Better Than Bouillon base. ) (If you are using a seasoned broth from cooking the chicken, you’ll only need 1, or maybe none. If using water, use 2 or more.) Pour over the rice, (meat) and seasonings.
Bake at 350° for 1-1.5 hours – until rice is soft and water absorbed. (My oven usually takes 1 hr. 15-20 minutes.)
This feeds our family of 8 – 3 little kids, 3 big kids.

And our weekend is off! Friday we picked up 2 of dd’s friends (young adults, flying in to Denver from their home in Michigan,) that we’d met with their family at Family Reformation Camp 4 years ago. Friday night 2 other friends, that we’d met with their family at Little Bear Wheeler’s family camp 3 years ago, also drove in (from Denver.) For this week the boys REALLY outnumber the girls here. 8 to 4! That is REALLY strange still for me, even though our 4 older girls have been grown and gone for quite a while now. (Youngest of the 4 married nearly 5 years ago.)
The young people have a busy weekend planned, in addition to our family activities. All will culminate (mostly) in the annual Memorial Day cookout at our house, with hopefully at least most of our grown children and grands joining us. We will return the last of our visitors to Denver on Wed. (unless K goes good on her declaration that she’s staying here). 🙂 We’d love to have her.
Recovering from a brief whammy that started Wed. Sore throat, unable to breathe, cough, chills, fever. Felt quite a bit better Thur. Was able to get up for the not yet bright but early drive to Denver to pick up daughter’s friends yesterday. BUT, had absolutely NO voice yesterday. Today I’m preparing to sing special for church tomorrow – make that SIGN. I’m preparing backup for SIGNing, not SINGing this time. But I’m feeling much better. Voice returning. Just keeping the Kleenex close.
Here’s what I’ve used: [edited to update to what we are currently using]
On Guard in a Spray – down my throat at first sign of sore throat
Colloidal Silver – alternated with the Spray at the beginning
Fresh lemon juice (or Lemon Essential Oil, if we don’t have fresh lemons) and raw honey in hot water – sip often
It’s that time of year. Spring colds and congestion. Here are some things that have helped our family. (Not prescribing or anything, just telling what works for us. Use at your own discretion.) Eucalyptus herb– drink hot tea made from it, make a poultice from it and put it over your nose and sinuses, breathe the steam of it (put a handful or more into a pan of boiling water, remove from heat before adding the herb. cover the pan and let set about 15 min. cover your head and the pan with a towel and breathe deeply of the infusion. – You can also do this with chamomile herb. Chamomile is very relaxing too.) Traditional Medicinals makes tea bags called Breathe Easy (eucalyptus, licorice root and fennel) that are good if you can’t or don’t want to get the eucalyptus herb in bulk. (Chamomile Tea Bags.)
Irrigate your sinuses. Make a saline solution by dissolving 1 tsp. sea salt in 1 cup distilled room temp. water. Fill a large rubber bulb syringe (a 4 oz. baby syringe) with the solution and squirt it up your nose – do it over the sink – and let it drain out. Do both nostrils several times. This never fails me.
Eucalyptus (or eucalyptus blend) therapeutic-grade essential oil. Rub over the sinuses, and also place in a nebulizing diffuser. We use Breathe blend from doTerra.

Our church is presenting the Living Lord’s Supper for our community. It is a powerful representation of Jesus’ last supper with his disciples. The scene is set up like the famous painting of the Last Supper by Leonardo da Vinci. Each disciple introduces himself and wonders if it could be him who will deny his Savior. In-between every couple of disciples’ monologues is a choir or solo/duet piece.
As many of these types of presentations are, it is a family affair for us, with many of us involved. From curtain puller – #2ds looks mighty sharp in that white shirt and black tie 🙂 – #1(at home)dd is helping with make-up, and she and I are in the choir. I also sing a powerful solo. I love this song! and am glad I got the opportunity to present it in this production.
Dress rehearsal was Thursday, Passover night. We had an awesome time of communion together. Our first performance was last night, Good Friday. 2 more to go, tonight and Resurrection Sunday evening. This has made a busy season for our family, but one that has been well worth it. We pray that God, the Author and Maker of all, will touch and convert hearts through the message of the sacrifice of His Only Begotten, sinless Son, for sinful, rebellious people that they might have everlasting life and communion with their Maker, Lord, and Savior.
