Today’s Menu

Here’s our Thanksgiving Menu. An optimal menu? No. A traditional menu for generations of our family? Yes. Made mostly Good for You-Naturally!™ (foods I don’t prepare are out of my hands) 🙂 – just way too much cooked food. (See tomorrow’s post for help in balancing this.)

  • Turkey
  • Mashed Yams – recipe to come on Wed.
  • Mashed Potatoes and Gravy
  • Bread Stuffing
  • Scalloped Corn
  • Creamy Mushroom Green Beans
  • Bow-Tie or Cloverleaf Dinner Rolls, Butter and Fruit Spread – recipe for dinner rolls another time.
  • Stuffed Celery – peanut butter and cream cheese (not together) 🙂
  • Green Salad
  • Cranberry Sauce
  • Black & Green Olives
  • Pumpkin Pie – recipe to come on Wed.
  • Pecan Pie

What is not “traditional” on our family’s menus has been raw veggie salads.  I have added, in my contributions to the meal, a “Green” Salad of some sort over the last several years (whether others eat much of it or not.)

I’ve made Spinach Salads – Spinach Strawberry is good, but strawberries are pretty high, if available at all. I’ve made an orange and spinach salad – hmm, wonder where that recipe is? It went over well. I’ve been looking at a Red Leaf Lettuce and Orange Salad, but thinking perhaps I will make Pear and Butter Lettuce this year.

Remember to include your “greens” in your Thanksgiving Menu! and Count Your Blessings!

Simple Snack – Friday Food

fridayfood2.jpgIt’s been a busy week, so I’ll just give you a VERY SIMPLE Snack Recipe this week – but so YUMMY! and Good for You-Naturally!

Apple Wedges and Almond Butter

My dc LOVE this, (and me too,) – and even dipping the apples (or other fruits or veggies) into non-homemade, organic, nut only butters works – peanut, cashew, almond, or sesame could be used.

Almond Butter:

Fit Champion Juicer with blank for “homogenizing” foods (rather than juicing). Turn on and pour in Raw Almonds. Push through with food pusher. Feed slowly for a creamy nut butter, faster for chunky.

If butter is too dry, more like almond meal, sitr in just a bit of olive oil, or put through Champion again with just a bit of olive oil. You can also make nut butters in a blender or food processor if you don’t have a Champion.

Tip: The natural oil in your almonds will flow better, making a creamier butter, if your almonds are a bit warm, not cold from the fridge. I usually warm mine up just a bit on the dehydrator, set at 110°. You don’t want to heat them higher, or you will destroy the enzymes.

Slice Apples, or other fruits or veggies, and dip/scoop into the butter, and eat. Bananas aren’t the best scoopers since they are softer, but you can still put a hunk of nut butter on them for a great, yummy snack or lunch.

You got a hankerin’ for chocolate? It’s not exactly the same, but carob is a Good for You-Naturally!™ substitute. Stir some vegan, malt sweetened carob chips into the nut butter before scooping onto the fruit, for an occasional treat.

My Baby

Not my normal type post today. Not a normal day. Today’s our baby’s birthday. She was born 18 years ago.

Today’s a dreary snow flurry day, but no bitter cold blizzard like 18 years ago.

18 years ago I went to vote that night when I came home. Today we know the results of the election of 2 days ago. 18 years ago we lost our gubernatorial seat, and they also retained the senate seat. This year we kept our senate and house seats, but lost our Presidential seat.

18 years ago she would have come home to 4 older sisters. Today she’d be living with 4 younger brothers, plus 2 younger sisters. But she still wouldn’t have been able to vote yet – missing it by 2 days would have been a ‘bummer’ I’m sure.

18 years ago our baby was born – and died, 3 hours after she was born. Today I visited her grave, for the 18th time on this day.

We’d be taking her out for dinner for her 18th birthday tonight. It would be quite the celebration. The guys aren’t here tonight – off shopping at Cabela’s. I think we girls will go celebrate – her who has gone before us.

Baby Carrots -Mmm, mmm?

I recently got an email about baby carrots being dipped in an anti-microbial,  chlorine solution, to minimize contamination, "sanitize" our food. True?

Yes, this one is. The claim is they rinse the chlorine off so that makes it "safe." Are ALL baby carrots chlorine immersed? I don’t know. Are other veggies? Yes.

It’s best to just cut your own carrot sticks, as well as other chopped veggies, and avoid both "contaminated" cut-and-packaged vegetables and the chlorine, a known carcinogen.

Avoid chlorine in your drinking water too – and your showering water. Get an RO filtering system for your drinking water, and a shower filter.

Today is a REAL Menu, not a great Menu Plan. 🙂 On a hectic, non-planned day, this is what you may find to eat around here.

Breakfast:

  • Barley Grass Juice
  • Bananas

Lunch:

  • Carrot-Raisin Salad
  • Pumpkin Muffins w/ Butter

Snack:

  • Fresh Fruit

Supper:

  • Baked Potatoes
  • w/ Creamed Peas
  • Lettuce, Tomato, Carrot Salad

Boffer Wars Continue

After having a great time in the Boffer Wars at the Reformation Day Faire last weekend, our boys of course had to come home and make their own Boffer weapons. They were thrilled to have an opportunity to do it soon, as our 11 yos, had his last football game Tues. and there was a pizza party planned at our house on Thur night. for the team. So perfect opportunity to engage again. The boys worked every free moment this week to get the weapons ready – mostly swords. They of course had a great time again, and were thrilled to introduce their friends to boffers.

Fake-acino – Friday Food

fridayfood2.jpgI promised this one, my fake, Good for You-Naturally!™ cappacino.

Lisa’s Fake-acino

Make a cup of roasted barley/chicory herbal coffee (Cafix) with hot, not-milk (instead of water). Add 1/2 tsp. raw Carob Powder, and 2-3 drops flavored (English Toffee, is a favorite) Stevia Drops (Sweet Leaf brand). Froth in frother.

When you are traveling, you can use Better than Milk (a milk substitute powder – soy or rice) and skip the frothing, to make an easier “on the road” drink. Just make your herbal coffee with water, and add milk powder, carob powder, and stevia drops and stir well. (Plain Teeccino or Celestial Seasonings Roastaroma are other herbal coffees you can use. Teeccino brews like coffee; Roastaroma brews like tea – in a tea bag.)

Tips: Of course, you could use one of the already flavored Teeccinos.

Carob Powder can be substituted in any recipe that calls for cocoa powder. It is a bit different taste than chocolate, but a good, Good for You-Naturally!™ substitute. Also, it is not bitter like chocolate.

Stevia leaf is an herb that is 300 times sweeter than sugar. You can buy it ground and sifted (a green powder – the straight herb) or a white powder (I don’t know what they do to it, obviously this is a processed product) or as a “tincture” in grapeseed oil (what the Sweet Leaf drops are.) When using the powder you use just a very small pinch, the drops, just a couple drops.

[Update: We have mainly used the plain ol’ cut and sifted Stevia herb, and just recently began using the Sweet Leaf drops. I’ve never tried or looked into what other Stevia processors were doing to it. Erica at SuperMom has posted why she only uses Sweet Leaf brand and not others.]

Catching Up

We’re home from vacation, (pics and details to follow) which wrecked havoc on our eating (well to some degree anyhow), even though we did as one only can, ate the best choices we had available – sometimes pretty good, sometimes mediocre. (And yet, I’d be remiss to not note our tremendous gratefulness and appreciation to the church for providing such wonderful spreads for us while we were there.)

One thing I had time to do while I was gone (with very little internet connection available) is go back through posts, and find there were a few in my drafts files that never got posted. So in addition to Saturday’s post, which didn’t get posted, due to lack of connection, there are 2 others from scattered times over the past year.
